Raspberry and Pineapple Pavlova

Sebenarnya, saya tak teringin pun nak coba buat pavlova sebab saya tahu rasa meringue mcmana, it's too sweet for me. Tapi sebab saya asik la tgk blog, cerita diorg beli pavlova and harganya mcm mahal gile bagi saya sedangkan hanya guna white egg. So, saya pun gigih nak buat sebab nak tunjukkan betapa senangnya buat pavlova ni, kalau saya buleh, korang laaaaagi la boleh.

Saya pun guna la tool utk extract egg yolk out of the egg. Cheh, buang masa je, tercampur gak sikit egg yolk with white egg. In the end, saya guna cara manual, lagi cepat dan senang. Kalau nak buat pavlova/meringue, you have to make sure takde setitik pun egg yolk ada dlm white egg tu. For this recipe hanya guna 4 white eggs sahaja, 250 gram gula, vanilla essence, conrflour and lemon juice. So sikit sgt barangnya, kenapa harganya mahal eh? Sampai RM65 for 7inches pavlova, hish!

Ingredients (Serves: 8)
4 egg whites
250g caster sugar
1 teaspoon vanilla extract
1 teaspoon lemon juice
2 teaspoons cornflour
475ml whipping cream, whipped
Any fruits, peeled and sliced

Method:
1. Pre-heat oven to 150 C / Gas mark 2. Line a baking tray with baking parchment. Draw a 23cm (9 in) circle on the parchment.
2. In a large bowl, beat egg whites until stiff but not dry. Gradually add in the sugar, 1 tablespoon at a time, beating well after each addition. Beat until thick and glossy. Overbeaten egg whites lose volume and deflate when folded into other ingredients. Be absolutely sure not a particle of grease or egg yolk gets into the whites. Gently fold in vanilla extract, lemon juice and cornflour. (My technique, use high speed but make sure you watch the white egg, if it's start to become stiff, spoon the sugar, one tablespoon at a time till finish. Check the texture of the batter using your thumb and index finger. If you can feel the sugar, beat again.)
3. Spoon mixture inside the circle drawn on the parchment. Working from the centre, spread mixture towards the outside edge, building edge slightly. This should leave a slight depression in the centre.

4. Bake for 1 hour. Cool on a wire rack.
5. Remove the parchment, and place meringue on a flat serving plate. Fill the centre of the meringue with whipped cream, sweetened if desired. Top whipped cream with any fruit slices.

I left the meringue overnight. Here's how it looks after I put the cream and fruits.

waaa.... terus teringat ada tinggal seketul lg pavlova kt rumah.. baru jek buat 3 biji 2 hr lepas, gara2 menurutkan kehendak tekak sendiri.. hehe!

akak, esok sy nk try buat pavlova ni. tp whipping cream ni nk carik yg macamana eh? sbb dulu pnh beli whipping cream dlm kotak, bila pukul, lgsung tak keras. cair je... Ke salah step?

erk, kalau dia tulis whipping cream dkt kotak tu, maksudnya mmg boleh whip sampai kembang. Tapi kalau pukul pakai tangan, mmg nangis la kan, lama tu. Kalau guna stand mixer with high speed, confirm dpt hasil mcm akak dalam masa yg sekejap. Mixer yg handheld tu pun buleh gak, tapi agak lenguh sikit la, tapi nak makan sedap, gigih aje la, hahahah
