Jamie+Martha Stewart and New York + American

Setiap kali saya nak buat roasted chicken, saya mmg kena google recipe baru. Pada saya ada je kurangnye output setiap recipe. Pernah cuba jugak recipe Jamie Oliver before this, tapi kulit ayam tidak rangup. Pastu google lagi, jumpa Martha Stewart punya recipe.  Macam biasalah, setiap rumah ingredients yang ada sentiasa aje tak complete. So kena make do dgn apa yg kita ada. So, ini adalah hasil combination Marta Stewart and Jamie Oliver.

Ayam besar gila sudah ready utk mandi steam dalam oven. Siap ada carrot and bawang sebagai alas dia nak lepak dalam roaster tu.


Tadaaaa. Dah masak. Tadi sebelum masuk oven, elok aje terkatup rapat kakinya. Dah siap masak, pandai pulak terkangkang, hehehehe.

 Tepi roasted chicken tu, saya buat gravvy nye, ala - ala KFC punya gravy. Sedappp, makan dengan mashed potatoes. Saya malas nak buat mashed, sebab mashed yg dkt Asda dah sedap pun, a pound je harganya. Ini recipe gravy.

KFC GRAVY (Source: Group Recipes :-))
Ingredients:
1 T vegetable oil
5 T all-purpose flour
1 can Campbell's chicken broth (plus 1 can of water) (Since tak sure Campbell kat sini halal ke idak, saya guna Mushroom soup Knorr aje).
1/4 teaspoon salt
1/8 teaspoon msg or Accent Flavor Enhancer
1/8 teaspoon ground black pepper

Method: 
1. First make a roux by combining the oil with 1 1/2 tablespoons of flour in a medium saucepan over low heat.
2. Heat the mixture for 20-30 minutes, stirring often, until it is a dark chocolate color.
3. Remove the roux from the heat, stir in the rest of the flour, and add the remaining ingredients to the saucepan; mix well.
4. Put the saucepan back over the heat, turn it up to medium and bring the gravy to a boil.
5. Reduce heat and simmer for 15 minutes, or until thick.


Saya sebenarnya dah tak lalu dah dgn chocolate cake. Dah banyak kali makan gamaknye. Tapi saya buat juge sebab ramai peminat rupanya chocolate cake. Kalau org request, mmg saya buat, sebab saya suka nengok org makan. 

Ini ialah American Chocolate Cake. Konon-konon nak hias dengan chocolate button. Tengah-tengah syok letak design-sukahati-sayalah, tetiba dah habis rupanya chocolate button itu, ciss. So, terimalah design syok sendiri ini.  As for the cake, ini adalah penangan guna cake pan baru, hehehehe, sukati je main tuduh cake pan tu eh, ehehehhe. Macam permukaan bulan aje, tak rata, hahahaha.

Chocolate cake itu untuk tekak orang. Tekak saya?


Tekak saya adalah hanya kepada cheesecake, yg belah kanan tu.

 So, kali ni, saya cuba New York Cheesecake. Bagi saya, recipe ini adalah mudah dan sedaaaaap! Gambar cheesecake ada dkt Fazira, nanti update balik, ok!


NEW YORK CHEESECAKE (Source: joyofbaking)
Method:
1. Grease  a 9 inch (23 cm) springform pan. 
2. Place the springform pan on a larger baking pan to catch any leakage while the cheesecake is baking.
3. Preheat oven to 350 degrees F (177 degrees C) with rack in center of oven.


CRUST
Ingredients: 
2 cups (200 grams) of graham cracker crumbs or finely crushed Digestive biscuits
1/4 cup (50 grams) granulated white sugar
1/2 cup (114 grams) unsalted butter, melted

Method:
1. In a medium sized bowl combine the graham cracker crumbs, sugar, and melted butter. 
2. Press the crumbs evenly over the bottom and about 1 inch (2.5 cm) up the sides of the springform pan. 
3. Cover and refrigerate while you make the filling



TOPPING
Ingredients: 
1 cup (240 ml) sour cream (not low fat or fat free)
2 tablespoons (30 grams) granulated white sugar
1/2 teaspoon pure vanilla extract

Method:
1. In a small bowl combine the sour cream, sugar, and vanilla extract. 

Tips:  
1. Sometimes the surface of the cheesecake cracks.  To help prevent this from happening do not over beat the batter, especially when creaming the cheese and sugar. 
2. Another reason for cracking is overbaking the cheesecake.  Your cheesecake is done when it is firm but the middle may still look a little wet. 
3. Also, make sure the springform pan is well greased as cracking can occur if the


FILLING
Ingredients: 
32 ounces (1 kg) cream cheese, room temperature (use full fat, not reduced or fat free cream cheese)
1 cup (200 grams) granulated white sugar
3 tablespoons (35 grams) all purpose flour
5 large eggs, room temperature
1/3 cup (80 ml) heavy whipping cream (double cream)
1 tablespoon lemon zest
1 teaspoon pure vanilla extract

Method:
1. In bowl of your electric mixer place the cream cheese, sugar, and flour. Beat on medium speed until smooth (about 2 minutes), scraping down the bowl as needed. 
2. Add the eggs, one at a time, beating well (about 30 seconds) after each addition. Scrape down the sides of the bowl. 
3. Add the whipping cream, lemon zest, vanilla extract and beat until incorporated. 
4. Remove the crust from the refrigerator and pour in the filling. 
5. Place the cheesecake pan on a larger baking pan and place in the oven.
6. Bake for 15 minutes and then lower the oven temperature to 250 degrees F (120 degrees C) and continue to bake for about 60-80 minutes or until firm and only the center of the cheesecake looks a little wet and wobbly. Remove from oven and place on a wire rack.
7.  Spread the topping over the warm cheesecake and return to oven to bake for 15 more minutes.  
8. Remove from oven and carefully run a knife or spatula around the inside edge of pan to loosen the cheesecake (helps prevent the surface from cracking as it cools).
9. Let cool before covering with plastic wrap. 
10. Refrigerate several hours, preferably overnight. Serve with fresh fruit or fruit sauces.


Berbaloi gile buat cheesecake ni. Sungguh yum yum!!! Dengan ini saya declare, ini adalah cheesecake yang terbaik!!!


Korang prefer which one, chocolate cake or cheesecake?

ouhhh for me always chocolate cake!, btw terliur beb tgk coklat melimpah ruah (cam kenal je cake stand plate tu, beli kat Argos ek:), ni membuatkan i nak masuk dapur balik, br je selamat wat kek oren moist..hehe

I prefer cheesecake tapi kadang2 selera nih jahhhat, nak juga rasa choc cake (nak nak dpt molten choc cake kat Chilli's tu).

my wife kata, bila dia masak ikut resepi jamie, OK..sedap...rosted ciken ni pun dia dah try..

ada lagi satu tukang masak pastry/kek..anna wilson ke hape nama nya..yg itu kalau my wife ikut resepi dia bulat2, memang manis gile! agaknya gula kat sana mmg manis sgt kot :P
